Billionaire Soft Serve; the Uk’s Most Expensive Ice Cream

With partnerships with Duck & Waffle and Sushi Samba, we’re no stranger to new and exciting collaborations and as soon as we heard about Selfridge’s new collaboration with Snowflake Luxury Gelato we knew we had to find out more about their Billionaire Soft Serve!
Edible gold is not a new concept, but this cone certainly is. Snowflake Luxury Gelato have sourced some of the rarest ingredients available for this ‘Billionaire’ dessert like no other!
A take on the ’99 Flake’, Snowflake’s chefs have transformed the well-known soft-serve into a luxury treat, costing £99, weighing in at a whopping 350g and taking 4 hours to make.
Let’s start with the cone, which is dipped in rare, single plantation, organic Madagascan chocolate. ‘Criollo Cocoa Chocolate’ is made on a plantation which produces just 2 tons per year of this exclusive cocoa and is harvested completely separate to their other, world-famous cocoa.
Inside the cone sits a base of caramelised pecans followed by luxury truffle spheres filled with dark chocolate, mango, ginger and passionfruit sorbetto and then comes the salted caramel soft serve gelato made with Persian Blue Sea Salt.
“[This salt] is found in Iran and is a natural rock salt that is mineral rich with a hint of sweetness. It is dotted with blue crystals which are in fact salt crystals that have been highly compressed, causing them to turn blue.”
Topping the gelato is a muddle of delightful goodies including a macaroon with ‘edible diamonds’, a gold-coated chocolate flake (of course, for the 99!), a pipette full of salted caramel sauce to drizzle, a golden chocolate spoon to save appearances and ‘finished with a glistening leaf of edible gold’.
Whilst Snowflake do offer bespoke gelato stix in an array of flavours, we feel that the Billionaire Soft Serve is what we’ll have to indulge in next time we are in Selfridges!
